Avocado Apple Coconut Keto Smoothie

An Unlikely But Delicious Combination

Want a creamy nutritious smoothie that’s keto-friendly? Look no further than this powerhouse of healthy flavor right here. Lots of smoothies are filled with things that seem healthy but are deceptive and conceal lots of hidden carbs that make them a big no-no for staying in ketosis. But with rich coconut, creamy avocado, and tart apple, you won’t even notice the missing carbs in this low-carb, flavor-packed keto smoothie.

I’m also realizing that working in a kitchen for 3 years has given me knowledge that some people do not have and I remember that prior to my kitchen time I hated avocados because they were a pain in the ass to prep. Nowadays they’re simple as pie, so let’s do a quick rundown on making your life with avocados 100 times easier.

So, let’s conquer avocado prep once and for all, to not only make this keto recipe easier but all avocado recipes forever.

Mastering The Art of Avocado

The first thing you want to do is find a ripe one. Color is not always as accurate as you would think, so you want to grab the avocado and basically feel it up in order to get a good idea of its ripeness. It should be mostly firm with a little bit of yield, not too hard and not too squishy. There are far too many jokes to make here so I’ll just go ahead and blaze right past them.

Once you’ve groped your avocado sufficiently and it’s ready to go, we want to grab a nice sharp knife to cut it in half. Take the avocado in your non-dominant hand and the knife in your dominant hand — don’t wack the knife against the avocado! Take it and press it against the skin until it breaks through. Wacking it with the knife can often times slice right through the pit into your hand. Trust me, it happens.

Now you want rotate the avocado length-wise while the knife is still inside, barely touching the pit. This will create a cut along the avocado allowing you to open it much more easily. Just take the knife out and twist one half and it will pop right off.

Use the knife to wack the pit very lightly, and once the pit is on the edge of the knife you can twist it and it will also come right out.

Final step is taking a large spoon and inserting it between the avocado and the skin, right on the edge where the light green meets the dark green, slide it between that spot and you can scoop the entire thing out leaving nothing behind except the empty skin.

Back To Your Keto Smoothie

Anyway, this is really about the keto smoothie, so… To prepare a single serving, combine the following ingredients in a blender:

  • 1 large ripe avocado, pitted
  • 2 slices of apple
  • 1/2 cup coconut milk (unsweetened, from a carton)
  • 1 Tablespoon (15 ml) lime juice
  • 1 Tablespoon (10 g) collagen powder
  • 1 teaspoon (5 ml) MCT oil
  • 1 teaspoon (2 g) unsweetened shredded coconut, for garnish

And uh, yeah. That’s it. You’re done!

If it comes out too runny you can add ice to thicken it up! Also, if you have some extra carb room at the end of your day you can even add some almond butter for extra creaminess to take it to the next level.
