Pancakes. Hotcakes. Flapjacks. Breakfast discs. …Okay, no one calls them that except me. Whatever you do call them, though, one thing is certain: pancakes are a top 5 breakfast food. You can’t go wrong with fluffy, warm, buttery, sugary deliciousness. Some people lament over things like pancakes when they start keto. “How am I supposed to make delicious pancakes without stuffing myself full of carbs,” I can hear you asking in despair. Look no further; these are the greatest keto pancakes out there! They’re rich and buttery, and there’s no cream cheese in them. There are no other pancakes that dare stand up to these titans of early morning munching! (Or whenever your particular pancake craving happens to strike!)

Ingredients
- 2 cups almond flour
- 1 tbsp avocado oil (or coconut)
- 4 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 tbsp sweetener of choice
- pinch of salt
- 8 tbsp butter, melted
- 2 to 4 tablespoons water (see note)
- extra butter for griddle
Directions
🍴 Step 1
Combine the first 7 ingredients in a food processor and/or blending instrument of your choice. Keep the speed setting low and lowly pour in the butter, processing until smooth and fully incorporated. Add 2 to 4 tablespoons of water if needed (it’s almost always needed) and mix. After this, the batter should be nice and thicc.

Let your thicc batter rest for about 4-6 minutes.

Grab a nonstick skillet or griddle-like instrument of your choosing and set to medium-low heat. Portion the batter out 1/3 cup at a time.
🍴 Step 4
This is the crucial step for any pancakes. Cook until the edges are just set enough to be solid, but the center is still a tiny bit bubbly. Your spatula or food-flipping instrument of your choosing should slide right under with little resistance. This is how you know they’re perfect.
🍴 Step 5
Flip that sucker over and cook for another 45 seconds – 1 minute.

Serve ’em up with some butter & sugar free syrup and start bragging!
