“Easy Keto Spinach and Artichoke Lasagna: A Meatless Delight!”

– 4 zucchinis, sliced into thin strips
– 2 cups spinach, chopped
– 2 cans artichoke hearts, drained and chopped
– 2 cups ricotta cheese
– 2 cups keto-friendly marinara sauce
– 1/2 cup grated Parmesan cheese
– 1/4 cup olive oil
– Salt and pepper to taste

– Carbs: 10g
– Fat: 25g
– Protein: 12g


1. Preheat the oven to 375 degrees F.

2. In a large bowl, combine the zucchini, spinach, artichokes, ricotta cheese, 1 cup of the marinara sauce, Parmesan cheese, and olive oil. Season with salt and pepper to taste.

3. Grease a 9×13 inch baking dish with olive oil. Pour in the remaining marinara sauce and spread it evenly across the bottom of the dish.

4. Layer the zucchini slices across the bottom of the dish. Top with half of the spinach-artichoke-ricotta mixture.

5. Layer the remaining zucchini slices on top of the spinach-artichoke-ricotta mixture. Top with the remaining spinach-artichoke-ricotta mixture.

6. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.

7. Let cool for 10 minutes before serving. Enjoy!

Vegetarian Alternative:

This recipe can easily be made vegan or vegetarian by omitting the ricotta cheese and substituting vegan cheese in its place. For an even heartier lasagna, try adding mushrooms, bell peppers, and/or onions to the spinach-artichoke-cheese mixture.
