Fresh Keto Chicken Breast Salad

This gorgeous, flavorful chicken salad is the epitome of a simple seasonal keto dish. Fresh, juicy and hearty enough to keep you full until dinner! (or dessert!)


  • 4 oz chicken breast
  • 1 tsp olive oil
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp dried oregano
  • 2 large leaves of romaine lettuce, rough chop
  • 510 cherry tomatoes
  • 1/4 medium cucumber
  • 1/4 medium yellow onion
  • 1 tbsp parsley
  • 1/2 tbsp tahini
  • 1 tbsp lemon juice
  • salt and pepper to taste


  1. Preheat your oven to 180 F.
  2. Place your raw chicken breast in a bowl and prepare to flavorize it! Sprinkle in your olive oil, paprika, cumin, oregano and s+p. Toss your chicken around in this mixture until it has a nice even coating on it.
  3. Line a small baking tray with parchment or foil, slap your chicken on there and pop that bad boy in the oven to bake it at 180 for 20-25 minutes.
  4. Veggie time! Rough chop your romaine lettuce, halve your cherry tomatoes, slice up your cucumber piece and your onion piece as well. Lay everything down on a large plate or bowl to serve as the beautiful emerald nest for your chicken.
  5. When your chicken is finished take it out and be sure to let it rest before cutting!
  6. While you rest the breast we can make our dressing! In a small bowl mix your tahini and lemon juice together with 1/2 tbsp of water and really stir it up nice and good.
  7. Add the chicken, dressing and some minced parsley on top for the final touches and voila!
