Keto-Friendly Baked Zucchini Fritters

Keto-friendly eating has become increasingly popular in recent years and is no longer limited to just weight loss. Instead, keto-friendly recipes have become a mainstay for those looking to adopt a healthier, lower-carb lifestyle. One of my favorite keto-friendly dishes is Baked Zucchini Fritters. These delectable fritters are packed with flavor and nutrition and make a great appetizer or light meal option.


-3 medium zucchinis, peeled and grated
-1/4 cup almond flour
-2 eggs
-2 cloves garlic, minced
-1/4 teaspoon sea salt
-1/4 teaspoon black pepper
-1 tablespoon olive oil
-1/4 cup freshly grated Parmesan cheese

1. Preheat oven to 375°F.

2. In a large bowl, mix together grated zucchini, almond flour, eggs, garlic, salt, and pepper until combined.

3. Divide mixture into 8 equal portions and shape into patties.

4. Heat olive oil in a large skillet over medium-high heat. Add patties and cook until golden brown and crispy, about 3 minutes per side.

5. Transfer to a greased baking sheet and sprinkle with Parmesan cheese.

6. Bake for 12-15 minutes, or until cheese is melted and fritters are cooked through.

7. Serve hot with your favorite dipping sauce.

Vegetarian Alternative

To make a vegetarian version of these fritters, simply replace the eggs with 2 tablespoons of flaxseed meal mixed with 6 tablespoons of water.

Vegan Alternative

To make a vegan version of these fritters, simply replace the eggs with 2 tablespoons of ground flaxseed mixed with 6 tablespoons of water and the Parmesan cheese with vegan cheese.
