This spinach and artichoke dip is creamy and cheesy, with just the right amount of spices. It’s perfect for any party or gathering or just as a snack. And best of all, it’s super easy to make. Let’s get started!
Ingredients:
• 2 cups of fresh spinach, chopped
• 1 14-ounce can of artichoke hearts, drained and chopped
• 2 tablespoons of butter
• 1/2 cup of cream cheese
• 1/2 cup of mayonnaise
• 1/2 cup of Parmesan cheese, grated
• 1/2 cup of mozzarella cheese, grated
• 2 cloves of garlic, minced
• 1 teaspoon of Italian seasoning
• 1/2 teaspoon of red pepper flakes
• Salt and pepper to taste
Vegetarian Alternative:
• 2 cups of fresh spinach, chopped
• 1 14-ounce can of artichoke hearts, drained and chopped
• 2 tablespoons of olive oil
• 1/2 cup of vegan cream cheese
• 1/2 cup of vegan mayonnaise
• 1/2 cup of vegan Parmesan cheese, grated
• 1/2 cup of vegan mozzarella cheese, grated
• 2 cloves of garlic, minced
• 1 teaspoon of Italian seasoning
• 1/2 teaspoon of red pepper flakes
• Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a medium bowl, combine the spinach, artichoke hearts, butter, cream cheese, mayonnaise, Parmesan cheese, mozzarella cheese, garlic, Italian seasoning, red pepper flakes, salt, and pepper. Stir until all ingredients are combined.
3. Transfer the mixture to an oven-safe baking dish.
4. Bake in preheated oven for 20-25 minutes, or until the dip is golden brown and bubbly.
5. Serve warm with your favorite keto-friendly crackers or veggies. Enjoy!
