Keto Kat’s Creamy Cauliflower Soup

Cauliflower is one of the most versatile vegetables when it comes to the keto diet. It can be used as a substitute for rice, potatoes, and even pizza crust! Today, we’re going to use cauliflower as the star ingredient in a creamy and decadent soup.


– 1 head of cauliflower
– 2 cloves of garlic
– 1 onion
– 2 cups of chicken or vegetable broth
– 1 cup of heavy cream
– 1/4 cup of grated Parmesan cheese
– Salt and pepper to taste
– Optional toppings: chopped chives, crumbled bacon


1. Cut the cauliflower into florets and chop the onion and garlic.

2. In a large pot, sauté the onion and garlic until they’re fragrant and translucent.

3. Add the cauliflower florets and broth to the pot. Bring the mixture to a boil and then reduce the heat to a simmer.

4. Cook the cauliflower until it’s soft and tender.

5. Using an immersion blender or transfer the mixture to a blender, blend until smooth.

6. Add the heavy cream and Parmesan cheese to the pot and stir until well combined.

7. Taste the soup and add salt and pepper as needed.

8. Serve the soup hot, topped with chopped chives and crumbled bacon if desired.

Vegetarian alternative:

Replace the chicken broth with vegetable broth and omit the bacon topping.

Vegan alternative:

Replace the heavy cream with full-fat coconut milk and omit the Parmesan cheese.
