Keto Kat’s Low-Carb Zucchini Fritters

Zucchini is a versatile vegetable that can be used in a variety of ways in low-carb cooking. One of my favorite ways to enjoy zucchini is in the form of fritters. These crispy, savory bites are easy to make and perfect as a side dish or snack. Plus, they’re keto-friendly and packed with nutrients. In this recipe, I’ll show you how to make low-carb zucchini fritters that are sure to be a hit.


– 2 medium zucchinis, grated
– 1/4 cup almond flour
– 2 tablespoons coconut flour
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 eggs, beaten
– 2 tablespoons avocado oil (or any high-heat oil)


1. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a colander and sprinkle with salt. Let sit for 10-15 minutes to release excess moisture.

2. Squeeze the zucchini to remove as much liquid as possible. Place the zucchini in a large mixing bowl.

3. Add the almond flour, coconut flour, Parmesan cheese, garlic, salt, and black pepper to the mixing bowl. Mix well.

4. Add the beaten eggs to the mixing bowl and stir until the mixture is well combined.

5. Heat the avocado oil in a large skillet over medium-high heat.

6. Using a cookie scoop or spoon, drop the zucchini mixture into the skillet, flattening each fritter slightly with a spatula.

7. Cook the fritters for 2-3 minutes on each side, or until golden brown and crispy.

8. Transfer the fritters to a paper towel-lined plate to remove any excess oil.

9. Serve immediately with your favorite dipping sauce.

Vegetarian/Vegan Alternative:

For a vegetarian alternative, simply omit the Parmesan cheese. For a vegan alternative, use a vegan Parmesan cheese substitute or omit the cheese altogether.


– Be sure to squeeze as much liquid as possible out of the zucchini to prevent the fritters from becoming soggy.
– If the fritters are not holding together well, add another egg to the mixture.
