Whatchu Taco ‘Bout?

Taco Tuesday is obviously a classic dinner tradition for a lot of folks out there, myself included. Well, when I feel like it.

This recipe is yet another shining example of how you can avoid cheat days, stay in ketosis, and somehow still have all your favorite foods like before.

Remember those Jenny Craig infomercials that would play all the time in the late ’90s and early ’00s? It would always blare out of my TV: “Lose weight while eating all your favorite meals!” I would scoff loudly, roll my eyes so hard they touched the back of my skull and leave the room or flip to another channel. “What a ludicrous claim,” I would think to myself, “How can they expect anyone to believe such a thing?!

Well, suffice it say I had quite the egg-on-my-face moment after my run in with keto recipes. Apparently those shining, glorious claims that Dan Marino would so gloriously trumpet out of my gigantic Philips TV… well, they may have been true.

Okay, actually, don’t quote me on that because I never looked into whether or not that particular “diet system” actually worked or if it was just a bunch of hype like most products sold on television tend to be. I’m moreso referring to the underlying concept that you can eat what you want and still lose weight.

Simple Keto Ground Beef Tacos

Description

No need to rule out Taco Tuesday just because you’re a keto kat! Just like anything else, tacos can be easy and delicious without breaking you out of ketosis. Check it out!


Ingredients

  • 2 cups shredded Cheddar cheese
  • 1 pound ground beef
  • ½ package taco seasoning mix
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • ½ cup shredded Cheddar cheese
  • ½ cup tomatoes, diced

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper or silicone mat.

  2. Spread Cheddar cheese into four 6-inch circles, placed 2 inches apart.

  3. Bake in the preheated oven until cheese melts and is lightly brown, 6 to 8 minutes.

  4. Cool for 2 to 3 minutes before lifting with a spatula. Place over wooden spoon handle wrapped in aluminum foil balanced over 2 cups/cans. Let taco shells cool completely, about 10 minutes.
  5. Cook beef in a skillet over medium-high heat until browned, stirring often to separate meat, about 7 minutes. Season with taco seasoning, salt, and pepper; cook for 1 minute more.

  6. Divide beef mixture among cheese taco shells. Top with avocado, lettuce, Cheddar cheese, and tomatoes.
