Spicy Cauliflower Rice Bowl with Avocado Cream Sauce

Ingredients:

For the cauliflower rice:
– 1 head of cauliflower
– 1 tablespoon coconut oil
– 1 teaspoon smoked paprika
– 1/2 teaspoon cumin
– 1/2 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon cayenne pepper

For the spicy black beans:
– 1 can of black beans
– 1 tablespoon olive oil
– 1/2 teaspoon smoked paprika
– 1/2 teaspoon cumin
– 1/2 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon cayenne pepper

For the avocado cream sauce:
– 1 avocado
– 1/2 cup plain Greek yogurt (can substitute with vegan yogurt)
– 1/4 cup cilantro
– 1/4 cup lime juice
– 1/4 teaspoon salt
– 1/4 teaspoon cumin
– 1/4 teaspoon garlic powder
– 1/4 cup water (or more as needed)

For the toppings:
– sliced jalapenos
– diced tomatoes
– sliced green onions
– lime wedges

Instructions:

1. Preheat your oven to 375°F.
